Super Bowl Bacon Burger

Happy Super Bowl Everybody!!! Celebration time!! We have approached the midway point of our challenge, so this weekend gives us more than one reason to enjoy a delicious burger and even have a beer or glass of wine as well! What the heck!! We earned it and our hard work is beginning to pay off!! Here is  a pretty easy burger to make and the great part is, that it stays within the guidelines of our diet!! Anyway, the game is about to start, so I’ll get to the point!!

INGREDIENTS

1 pound of grass fed beef

4 strips of uncured bacon

4 eggs

1 Avocado

1 jar of local organic salsa (Or Homemade if available!!!)

- Season to taste! I recommend a dash of sea salt and garlic powder!!!

Preparation: This is pretty cut and dry… The ingredients will serve anywhere from 2-4 people depending on your portion size. I’ll usually make 4 quarter pound patties and grill them to your liking. I prefer medium temp, so I’ll usually pull the burgers off the flame while they are still pink. They will continue to cook for a few more minutes anyway! Doing this will preserve some of the taste and make for a juicier burger!! (The key to being the grill master!) Remember, this is a title you don’t necessarily want to claim! For this means you will be stuck on the grill the whole game!! Anyway, while the burgers are cooking, you can fry the bacon, dice the avocado and even fry a couple eggs! I usually fry one egg per patty.

Side: There are a million and one different side options you can incorporate with this burger! I have yet to find one that I don’t like! Pictured are some of D the Queen Bees sweet potato fries and I must admit this is probably my side order of choice, but you can toy around with a number of different things…. Steamed veggies work, or you can serve the burger on a bed of spinach or kale, all of which are delicious! So see what works for you! Have fun with it!! Until next time stay motivated!!

Cranberry Kale Salad

INGREDIENTS

Bushel of fresh kale

Handfull Dried cranberries

Handfull of pine nuts

1-2 tablespoons of extra virgin olive oil

1-2 tablespoons of vinegar

PREPARATION

Prepare kale by washing and chopping to your liking.
Find a good size bowl to mix the ingredients.
Add the handful of dried cranberries and pine nuts.
Using a spoon, pour 1-2 tablespoons of olive oil and vinegar ensuring you distribute it evenly over the top.
Mix all contents with a wooden spoon or just toss the bowl like a sauté chef insuring that you spread the ingredients evenly. It’s all in the wrist!!!
ENJOY!!!

This recipe serves as a good “pre-game,” to our higher protein/ fat meals such as a bacon burger without the bun. This will insure we are still getting our veggie intake while enjoying some of the more tasty recipes!!! (Bacon burger is coming up next!!) This salad can also serve as a great snack! “D The Queen Bees,”  Paleo Chicken Stew

INGREDIENTS

1 pound chicken breast

5 cups water

3 cups chicken broth

1 yellow onion, diced

1 small head broccoli, chopped

1 cup Brussels sprouts, chopped

2 large carrots, peeled & diced

3 stalks celery, diced

1 bay leaf

Sea salt & pepper to taste

PREPARATION: Slice and dice to your liking and combine all ingredients in slow cooler, cook on high 3-4 hours or on low for 8-10 hours.  Per order of the Queen Bee herself!!!!   Well one of them anyway…  (Yes there are two!!!) If you haven’t already met Queen Bee numero dos, you will  meet the her soon enough!!
